Most tourist enterprises honor major credit cards or travelers' checks but not personal checks. Bed and Breakfasts may insist on cash: find out in advance.
There are ATM machines all over Israel. You insert your card, enter your PIN and receive shekels from your home account. You can change back Israeli currency in the airport before you leave.
